Bimi in Tempura batter with chilli dipping sauce
Serves: 4

50g plain flour
50g cornflour
good pinch of salt
4tsp sesame seeds
175mls very cold soda water
vegetable oil for frying
350g Bimi
lime wedges to squeeze
Chilli sauce

Heat the oil in a large pan. Sift the flour into a bowl with a pinch of salt. Stir in the sesame seeds. Make a well in the middle and slowly pour in the soda water. Mix until just smooth.

Using tongs dip the Bimi into the batter and carefully put into hot oil, fry for 45 seconds until crisp. Remove with a slotted spoon and drain on kitchen paper.

Serve immediately with dipping sauce.
