140g pancetta cubes
40g Parmesan, shaved
extra virgin olive oil to drizzle
Trim the Bimi and steam for 3-4 mins until tender, but with a little bite remaining.
Meanwhile put the pancetta in a frying pan and fry over a medium heat until it has sizzled and turned golden brown, stirring from time to time. Add the pinenuts and fry for a further minute until they are golden.
Put the Bimi onto a serving dish, sprinkle over the pancetta, pinenuts and parmesan.
Finely drizzle with olive oil and serve immediately.
