Crostini with bimi
Servings: 4

8 thick slices ciabatta bread
2 cloves garlic, crushed
olive oil to drizzle
8 sprigs Bimi
200g cherry tomatoes
1tbsp balsamic vinegar


Rub each slice of bread with garlic and drizzle with olive oil, grill both sides until lightly toasted and golden.

Meanwhile steam the Bimi for 3-4mins. Chop the cherry tomatoes into small pieces and put in a bowl with the balsamic vinegar and season with black pepper.

Spoon the tomatoes over the slices of toasted bread, top with Bimi and serve
